This is a great vegetable side dish recipe for Thanksgiving, and has a delicious, cheesy taste that appeals to everyone. It is made with root vegetables and works as a fantastic side dish to add to your Thanksgiving menu.
Root Vegetable Gratin Recipe
This recipe is sufficient for an 8” round pyrex casserole dish, and serves 4-6 people as a side, but you can double it, or more, to make extra.
Ingredients
1 small onion, chopped
1 small turnip, thinly sliced
1/4 medium rutabaga, chopped into 1/2” cubes 1 small sweet potato, thinly sliced
1 5oz tub of crumbled blue cheese
1 1/2 cups fresh bone broth
Salt and pepper to taste
Step One
Prepare all your vegetables and put into bowls.
Step Two
Beginning with sweet potato, start to layer the vegetables in your dish (I use a round pyrex casserole dish with a lid), alternating each of the vegetables layers with a sprinkling of blue cheese and some salt and pepper.
Step Three
When the vegetables are layered, pour over the bone broth.
Step Four
Bake in a 425F oven for 1 hour, or until the vegetables are soft.
