Meatballs are usually seen with spaghetti or noodles as a way to add protein and flavor to an otherwise ordinary meal. However, with this recipe, meatballs will become the main course for your meal, and the leftovers will never look so enticing!

Here’s what you’ll need to make homemade meatballs:

Meatball Ingredients

  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 lb. ground chicken
  • 6 small potatoes
  • 1 yellow onion
  • 4 cloves garlic
  • 3 tbsp. of sour cream
  • 3 egggs
  • 1/2 tbsp. of salt
  • 1/2 tbsp. of black pepper
  • 1 cup of bread crumbs

You’ll also need a cast iron skillet and either corn or vegetable oil.

Yields: 50 meatballs

Step 1: Prepare the ingredients

Peel the potatoes. Clean the garlic and onion. Fine-grate the potatoes, onion, and garlic with a grater or a blender. If using a blender, put two eggs in with potatoes, onion, and garlic in order to make the blending process smoother.

Step 2: Mix everything

In a large bowl, use your hands to mix everything together. You can use a large spoon, but it is easier and faster if you use your hands. If your meat is too sloppy, add bread crumbs and mix until the consistency is thicker. If the meat is too hard, add sour cream.

Pour some oil into the cast iron skillet and turn the stove on and set it to medium heat. Place a small bowl with a little water nearby to rinse your hands. You will also need a small pot with a metal strainer inside it.

Step 4: Cooking the meatballs

Once the oil is hot, get your hands a little bit wet and grab some meat, whatever size you want your meatballs to be, and place it in the cast iron skillet.

When the edges of the meatball turn brown, and it does not stick to the skillet, the meatball is ready for you to turn over.

When the entire meatball is brown, use a fork to move it into the metal strainer.

These meatballs go great with rice or mashed potatoes. Or eat them with traditional red sauce and spaghetti. They can be chopped and added to eggs for breakfast, they can be eaten cold, or thrown between two slices of bread and eaten like a sandwich. Eat them however you like!
