Tomatoes, a seasonal favorite of many. It is one of the most commonly consumed vegetable all year ‘round. They are added to salsas, salads, sauces, sandwiches, and so much more.

Tomatoes are extremely easy to grow, harvest, and utilize. Plus, they come in many different sizes, a few different shapes, and a variety of colors. The flavor differences are incredible.

What Makes It A Superfood?

Tomatoes are nutrient dense and loaded with vitamins and minerals on top of all that tasty goodness. The tomato contains lycopene which helps prevent and protect us from chronic diseases and illness such as heart disease, cancer, inflammatory diseases and issues, and diabetes just to name a few. Lycopene is a fat-soluble carotenoid that gives tomatoes the red color, as well as, antioxidants that are higher than many other carotenoids. Tomatoes and tomato products enhance blood antioxidant capacities and also prevents cancer cells from growing.

1. Fried Green Tomatoes

Fried green tomatoes seem to be a traditional yet classic tomato dish. The crispy breading combined with the flavorful green tomato is delicious. The trick seems to be a combination of the batter, the type of oil, and how hot the grease is. In order to get it crispy make sure your oil is good and hot. High-heat oils such as avocado, peanut, and sesame are great choices.

This tomato mozzarella caprese stack recipe is incredibly delicious and refreshing. This is a classic Italian salad and appetizer that is easy to make and you can use any tomato that you favor. The ingredients are basic and simple yet the end result looks like a fancy dish. I thought the combination of tomato and avocado might be awkward and amazingly it is delicious.

5. Fresh Peach Salsa

This bright and colorful salsa recipe combines sweet and spicy and it works well. I love how the colors and flavors play well with one another. This salsa is less acidic than straight tomato salsa due to the peaches. It makes a great salsa dip but also a nice topping on some grilled chicken.

I have eaten this dish all throughout my life and it is incredible only the version I ate had white vinegar in it instead of the red wine vinegar. Now that I’ve found this recipe I have to say I was missing out a little bit. Delicious and refreshing!
